Happy New Year!
It is the start of 2012 and we are looking at new
mouth watering entrees to change up the dining
experience. The theme in the kitchen is
"new menus" and myself and Ray are working
on new recipes. Along with new lunch and dinner
menus coming soon, our Wednesday evening
buffet specials have a new twist. This month
Bobby Flay night on January 11th - he specializes
in Southwest cooking; and Rick Bayless night on
January 25th - he specializes in traditional Mexican
cuisine with modern interpretations. Be sure to

Oh the weather outside is frightful but inside it is warm and cozy.
Yes, it is the Holiday season and again December has gotten here
quicker than expected. If you have family coming to town and would
rather not have to do all of the work, let us take the burden of
cooking off your hands. We offer a Holiday Take Home Menu that
has a wide variety of snacks, appetizers and winter warmers to
make things easier on you. You can find a copy of the menu on
the club's website or call the office to recieve a copy. Let us
help take some of the stress out of your holiday.

The chill is in the air, November brings us cooler days as well
as fall vegetables. How can you resist a bowl of roasted butternut
squash soup on a chilly day. It is one of our featured soups offered
occasionally for lunch and dinner. November also brings
Thanksgiving, and what a better place to celebrate but here
at your club. You can carve your own turkey; we can carve
the turkey for you and serve family style; or you can order
a plated dinner. It is also the day the Packers will be pouncing
the Lions - another great reason to come to the club. Gather
with fellow members to cheer the Packers on to a win!

Fall, what a great time of the year. This past week has been
absolutely perfect for outdoor activities! While you are out
enjoying this Indian Summer why not stop in to the Club for
lunch or dinner. A new lunch menu was just launced in
September featuring Blackened Red Snapper and much
more! Saturday evenings in October you can dine from
the special Steak House menu featuring a 20 oz. Porterhouse
Steak, Loin Lamb Chops to name just a couple of the mouth
watering entrees featured on this special menu.

Fall, a season for fresh produce! As a matter of fact
this weeks Wednesday buffet will feature many of the
fresh vegetables from the Farmer's Market. Not only
are homegrown vegetables better for you, the taste is
exceptional! Why not try your hand at homeade salsa
or fresh corn relish - both sure to please!

Summer has finally come, and the club is in full
swing. There are some added events this summer
Nine and Dine for one - an event held on a Friday
evening each month. For August, members will dine
by the pool. Even if you are not a golfer, you certainly
are welcome to come out for kabobs, grilled seasonal
vegetables and of course, ice cream treats.

With the busy summer I would like to mention I couldn't
do it without my staff. I have many talents in the kitchen
and they do their job very well.

I will be hosting a cooking class this fall, watch for details.

Summer has arrived! The warm weather will bring fresh fruits
and vegetables and some special summer treats. It also means
more time for grilling and smoking. Be sure to watch the weekly
emails for upcoming specials of the week.

Yes it is April and finally warm weather. It looks like most of the snow is gone, and with the sounds and smells of spring, new, lighter fare specials will be offered. A selection of new salads with spring like toppings, of course there will still be the great fish specials (halibut is in season right now) as well as the mouth watering selection of steak entrees on the dinner menu. Make a trip out to the Club, and leave the dishes to us.

Seafood Cooking Class - Dinner menu now served

The seafood cooking class was fun as well as tasty. The
class filled to capacity and not only was the art of cooking seafood
mastered, it was also eaten! The best part of a cooking class! And
speaking of eating, the new dinner menu will be featured this
evening. One of my new items is the Niman Ranch Prime Sirloin
a tasty piece of beef. For those chicken lovers you will need to try the
Margarita Chicken, marinated in a margarita cocktail! The weather is
finally cooperating, make your dinner plans at your club.

The new menus are being put together as I speak and
will be presented the week after shutdown. Bruschetta
will be back as an appetizer; Niman Ranch steaks will be
featured on the dinner menu (Bone-in Ribeye for example);
Jack Daniels Shrimp; Almond crusted Chicken with Brie
and Apples; and brined Pork Chops are just a few of the
new items to be showcased. Make plans to come out
with friends and family to taste some of the new
featured items.

Cold, snow, cloudy skies...Mother Nature has given us a winter we
will not forget for a long time. This is however the best season for
warm, comfort foods such as meatlof, mashed potatoes and gravy.
Our homemade verson was just one of the great specials offered
this week.

New menus will be out within the next month. We will of course
keep those all time favorites, but again offer new,
mouth watering choices you are sure to enjoy!

warm Clubhouse Hoagie.
The hors d'oeuvres cooking class was a success, all members in
attendance seem to enjoy the actual hands on experience. I
will be hosting a seafood cooking class in March, watch for upcoming
details. This class will be limited to the first 10 to sign up.

Happy New Year To All!

The year 2011 will bring new ideas and new workshops. The first on the agenda
will be a cooking class held on Saturday, January 15th. This class will teach you preparation and actual hands on cooking for some very scrumptus hors d'oeuvres! These can be used for any party and are sure to be a crowd pleaser. Space is very limited so call soon if you would like to take part.

Now that we have our first snowfall it seems like the Holiday season.
The club is decorated and festive, the sweet treats are fabulous,
what a great time to entertain at your club. Come out on a
Wednesday evening to experience one of our fabulous dinner buffets;
or a Saturday evening when we feature Steak and Lobster.
The staff is busy making sure you have a pleasurable dining
experience no matter what day you are out.

This month I did a class on grilling - "Thrill of the Grill."
It was well attended and I heard great feedback. Grilling
is a passion of mine and even though the weather may be
getting colder remember it is never too cold for grilling!
If you are looking for pointers, please let me know I am
happy to pass on some of the secrets that making grilling
so tasty.

Have you tried our Wednesday Family night buffets?

For October we have some great specials; the always
great Chicken & Ribs; from Thursday evenings in September
we will introduce Cilantro night; ever popular Pasta night;
and fill the dining room with Mongolain Night. If you have
a suggestion for family night please let me know, always
looking for new ideas!

Fall is in the Air!

You can certainly tell that fall will soon be with us. This is a
great season for our cool weather vegetables such as squash.
You will see more use of squash now that the season is upon us.

Watch for a new lunch and dinner menu to be out some
time in the next couple of weeks.

And mark your calendars, Thanksgiving on November 25th
will return as a family sit down meal. Bring your knife and
you can carve your own bird, or have us carve
for you. Details will be forthcoming in the BDM newsletter.

Fresh Fish - what a great delicasy and a wonderful, tasty treat.
Wild King Salmon has been a popular choice this summer. Some of the
other mouth watering temptations have been Fresh Chilien Sea Bass;
Fresh Cod; and Fresh Haddock.

Of course for your meat lover's we offered Fresh Veal and Prime Rib
is being offered on Saturday evenings this month!

The tomatoes are red and ripe and the beans are almost ready to be picked!

It is July, the gardens have seen plenty of rain and good sunshine.
Soon we will have fresh vegetables, herbs and spices. You can see
how tall the plants have gotten and if you look close, we have
actual vegetables on the vine.

Summer time is a great time for grilling!
I like to smoke my own meat and recently I was introduced to a new way of smoking by Ted Voissem. His company manufactures small smoking stacks which work great on the grille. The prime rib is getting smoked for our Family Night BBQ special. I can't wait to taste it!

Can' wait for fresh veggies.
